Hot Szechwan Chicken

4 chicken breasts
2 tablespoons light soy sauce
1 tablespoon of dry sherry
2 tablespoons cornstarch
6 dried red peppers


2 tablespoons sherry
2 tablespoons dark soy sauce
2 teaspoons brown sugar
1-tablespoon sesame oil
1 teaspoon Worcestershire sauce
1-tablespoon water
1-tablespoon cornstarch
3 tablespoons peanut oil
Chopped green onions
Chopped toasted peanuts

Debone the chicken breasts, and cut into small pieces. Marinate them in the soy sauce, sherry, and cornstarch. Remove the seeds from the red peppers. Cut them into small pieces. Combine the sauce ingredients, and set aside. Now place the peanut oil in a hot frying pan or wok, and add the red pepper pieces. Cook for 15 seconds. Add the chicken, marinade and all, and cook over high heat, stirring constantly for 10 minutes. Add the sauce mixture, and cook until it thickens. Top with chopped green onions and chopped toasted peanuts. Serves 4.

Gourmet Grocer Butterscotch Cake
Serves 12

1 1/4 Cups water
2/3 Cup butterscotch flavored pieces
1 Package yellow cake mix -- 2 layer size
3 eggs
1/3 Cup cooking oil
1/8 Teaspoon ground cinnamon

***Butterscotch Frosting***
1 Package cream cheese -- 8-oz, softened
3 Cups powdered sugar -- sifted
1/3 Cup butterscotch flavored pieces -- melted and cooled
1 Tablespoon lemon juice
1/8 Teaspoon ground cinnamon
1 Cup powdered sugar -- about

Yellow cake mix and butterscotch flavored pieces make an Easy on the cook cake from The Gourmet Grocer in Kansas City, Missouri. It's a sentimental favorite with owner Tom Anderson. It's his mother's recipe. In a small saucepan, heat water and the butterscotch-flavored pieces together till the pieces are just melted. Cool for about 10 minutes. Grease and flour two 8x1 1/2-inch round baking pans or two 9x11/2-inch round baking pans. Set the pans aside. In a large mixing bowl, combine cake mix, eggs, oil, cinnamon and butterscotch mixture. Beat with electric mixer, as directed for cake mix. Pour batter into prepared pans. Bake in a 350ø oven for about 25 minutes for 9-inch layers or 35 minutes for 8-inch layers or till a toothpick inserted near centers comes out clean. Cool on wire racks for 10 minutes. Remove cakes from pans. Cool completely on wire racks before frosting.

BUTTERSCOTCH FROSTING: In a large mixing bowl, beat cream cheese, powdered sugar, butterscotch-flavored pieces, lemon juice, cinnamon till well combined. Beat in enough additional powdered sugar to make frosting spread able.

ASSEMBLY: Place 1 cake layer on a serving plate. Spread top with Butterscotch Frosting. Place second layer on top spread sides and top of cake with frosting store in refrigerator.

Gourmet Grilled Cheese and Ham

1/4-cup mayonnaise
2 Tbs. fresh chives, minced
1-Tbs of Dijon mustard
8 slices (1/2" thick) white bread
2 cups grated cheese
4 Tbs butter
Shaved ham

Combine mayonnaise, chives and mustard. Mix well and sprinkle with a little cayenne pepper, if desired. Spread one side of each bread slice with mayonnaise mixture. Divide cheddar cheese among 4 bread slices. Shaved ham should be added here. Top cheese with remaining bread mayonnaise side down Melt butter in heavy large skillet or griddle. Grill sandwiches on each side until golden and cheese melts. Yield: 4 sandwiches
