Habanero Chilli Sauce

Habanero chili Sauce:

15 Habanero peppers - roughly chopped
1 ripe mango - peels, pit, mash
1-cup cheap yellow prepared mustard
1/4 cup packed brown sugar
1/4 cup white vinegar
1-tablespoon curry powder
1-tablespoon ground cumin
1-tablespoon chili powder
Salt and pepper to taste

Mix all the ingredients together.

Yucatan Habanero Sauce
Yield: 1 cup

1/4 c Onion; chopped
1/4 lg ripe tomato; peeled, seeded, -and chopped
1/4 c Habanero; seeded and chopped
1/4 c Seville (bitter) orange juice
Or substitute a mixture of 1 part orange juice to 2 parts fresh limejuice
Salt to taste

In a bowl combine all the ingredients, seasoning with salt. Serve whenever a chili sauce is called for.

48 ripe tomatoes
5 peppers
12 onions
4C sugar
4C vinegar
1T salt
1T cinnamon
1T cloves (ground)
3T ginger
1T allspice

Chop all fine. Cook about 3 hours till thickens. I have used a little bit of cornstarch/water solution at very last; thickens and makes it smoother. Sterilize pint/quart jars and fill to within 1" of top. Screw on lids tightly
