Heated Wings with Blue Cheese

For blue cheese dressing:
1/2-cup mayonnaise
1/4-cup plain yogurt
2 ounces crumbled blue cheese (about 1/2 cup)
Salt and pepper to taste

4 celery ribs

3 pounds chicken wings (12 to 14)
6 cups vegetable oil for deep-frying
1/2 stick butter
3 to 4 tablespoons Frank's Hot Sauce
2 drops Pyro Diablo (optional)
1 1/2 tablespoons cider vinegar

In a bowl, whisk together mayonnaise and yogurt and stir in blue cheese (dressing will not be smooth). Dressing may be made 8 hours ahead and chilled, covered. Cut celery into thin sticks. Soak celery in a bowl of ice and cold water at least 30-60 minutes.

In a large (5- to 6-quart) deep heavy kettle heat 6 cups oil until a deep-fat thermometer registers 380° F. Just before oil reaches 380°F, pat dry 6 or 7 wings. Carefully lower wings into oil and fry, stirring occasionally, until cooked through, golden and crisp, 5 to 8 minutes. With a slotted spoon transfer wings to paper towels to drain. Pat dry and fry remaining wings in same manner, returning oil to 380°F between batches.

In a large skillet melt butter over moderately low heat and stir in remaining ingredients salt to taste. Add wings and toss to coat.

Sweet & Tangy Chicken wings

Chicken Wings:
16 (about 4 1/2 pounds) whole chicken wings
1 2/3 cups Barq's Root Beer
2 teaspoons salt
1/2 teaspoon black pepper, freshly cracked

5 cups Barq's Root Beer
1/4 cup yellow mustard, prepared
1 1/4 tablespoons hot pepper sauce
1/2-teaspoon salt

Preheat oven to 500°F. Rinse chicken wings under cold water and pat dry. Cut each wing into two pieces at main joint. Place wings in bowl with root beer and marinate 30 minutes. Remove wings, drain and reserve marinade. Season wings with salt and pepper and place on rack over baking sheet. Simmer marinade in saucepan over medium-high heat and reduce to 1/2 cup, about 20 minutes. In separate saucepan over medium- high heat, reduce root beer for sauce to 1 1/8 cups, about 30 minutes. While marinade and root beer sauce are reducing, place wings in oven and bake until golden, about 15 minutes. Remove and brush with reduced marinade. Flip wings over, brush with marinade and continue baking until wings are golden and glazed, about 15 minutes. Remove smaller pieces and keep warm. Return larger pieces to oven and bake until cooked through, about 10 minutes. Finish sauce by whisking mustard and hot pepper sauce into root beer sauce reduction. Salt to taste. Serve glazed wings with warm sauce.

Garlic Parmesan Wing Recipe
(6 servings)

2 lb Chicken wings
3 Heads fresh garlic; separated
Into cloves and peeled
1 cup Plus 1 T. olive oil; divided
15 Drops Tabasco pepper sauce
1 cup Grated Parmesan cheese
1 cup Italian style bread crumbs
1 tsp Cracked Black Pepper

Preheat oven to 375. Disjoint chicken wings, removing tips. Rinse wings; pat dry. Place garlic, 1-cup oil and pepper sauce in food processor or blender container; cover and process until smooth. Pour garlic mixture into small bowl. Combine cheese, breadcrumbs and black pepper in shallow dish. Dip wings into garlic mixture, then roll, one at a time, in crumb mixture until thoroughly coated. Brush shallow nonstick pan with remaining 1 T. oil; arrange wings in a single layer. Drizzle remaining garlic mixture over wings; sprinkle with remaining crumb mixture. Bake 45 to 60 minutes or until brown and crisp
