Avery Island Tabasco Country Marinade

1/2 cup dry white wine
1/4 cup white wine vinegar
2 tablespoons red or green hot pepper sauce
1 tablespoon vegetable oil
1 tablespoon honey
1 teaspoon dried thyme
1/2 teaspoon ground cumin
1/4 cup chopped green onions
2 cloves garlic, minced

In small bowl, whisk together wine, vinegar, hot pepper sauce, oil, honey, thyme and cumin. Stir in green onions and garlic. Place meat or poultry in shallow glass dish and add marinade, turning to coat. Cover and refrigerate, turning occasionally, 2 to 4 hours for beef or pork and 1 to 2 hours for poultry. Makes about 1 1/4 cups, enough to marinate 1 1/2 pounds of beefsteak or pork tenderloin or 2 pounds bone in chicken.

24 Hour Meat Marinade

2 c Olive oil
1 Clove garlic, chopped
1 1/2 t Pepper
2 Bay leaves
3 ds Tabasco
1/2 c Tarragon vinegar
1 1/2 t Salt
1/2 t Curry powder
1/2 t Lemon juice

In a large mixing bowl, combine olive oil, vinegar, garlic, salt, pepper, curry powder, bay leaves, lemon juice, and tabasco. Mix well and use as a 24-hour marinade on beef. Barbecue, stir fry or oven bake as desired.

Tabasco Barbecue Sauce
Use this for all meats, chicken and turkey parts.

2 tablespoons butter or margarine
1 medium onion, chopped
1 clove garlic, chopped
1/2 cup chopped celery with leaves
1/4 cup chopped green bell pepper
1 (1 pound 4 ounce) can tomatoes
1 (6 ounce) can tomato paste
1 bay leaf
2 teaspoons Tabasco® sauce
2 teaspoons dry mustard
1/3 cup vinegar
1/2 teaspoon cloves
1/2 teaspoon allspice
2 slices lemon
1 1/2 teaspoon salt
3 tablespoons brown sugar

Melt butter; add onion and garlic; cook until tender but not brown. Add remaining ingredients and simmer 30 minutes.

Let stand until cool. Pour into jar; cover and refrigerate
