Steamed Ham and Brussels Sprouts

1-1 1/2 lb. ham steak
1 lb. fresh brussels sprouts
1 cup water
1 1/2 tsp. salt
1/3 lb. bacon or side meat
(cut into 1 inch pieces)
1 large yellow onion (diced)

Cut ham slice into 1 inch wide strips about 3 inches long. In a large saucepan, combine the brussels sprouts, water and salt. Simmer, covered, for 12 to 15 mins. until they are tender.
Fry bacon in a heavy skillet until crispy then remove all but 3 Tbsps. of the grease. Add the onion and saute until the onion softens. (about 5 mins.) Drain the brussels sprouts and add with ham to the skillet. Cover and steam over a low heat for 5 to 7 mins.

Chicken Casserole

1 (2 1/2 to 3 lb.) chicken
1 stick margarine
1 tsp. salt
1 cup flour
1 cup milk
1 can cream of celery soup
1 cup chicken broth
3 tsp. baking powder

Cook the chicken in water until very tender. Pull the meat from the bones and shred it with your fingers then spread evenly in the bottom of a 13 X 9 baking dish. Melt the margarine and pour over the chicken. Sift the salt, baking powder, and flour together into a mixing bowl and blend in the milk until smooth. Spread this flour mixture evenly over the chicken. In a saucepan, blend the soup with a cup of the chicken broth and heat slowly to a boil. Pour this over the flour mixture. Bake at 425 for one hour, it should be lightly brown when done.

Southern Buttermilk Fried Chicken

1 broiler-fryer chicken cut into pieces
1-cup buttermilk
1/2 cup all-purpose flour
1 tsp. salt
1/2 tsp. pepper
vegetable oil
Place chicken into bowl. Pour buttermilk over; marinate at least 1 hr. In another bowl, mix flour, salt and pepper. Remove chicken from buttermilk. Roll pieces in flour. Pour 1" of oil in skillet. Cook until one side is browned, then turn and brown other side, about 20 minutes total.

Remove chicken and place on paper towels to drain. Remove oil except for 1/3 cup from skillet. Add 1/3 cup flour to oil and brown lightly. Add 2 cups water to thicken, then add more if needed to thin.

Serve with mashed potatoes or rice.
