Stuffed Green Pepper Soup
(Slow Cooker)

2 pounds ground beef, browned and drained of fat
1 (28-ounce) can tomato sauce
1 (28-ounce) can diced tomatoes, un-drained
1 cup uncooked rice
2 cups green peppers (about 2 peppers), chopped
2 beef bouillon cubes
1/4 cup brown sugar, firmly packed
Salt and pepper, to taste

Place all ingredients in a slow cooker and cook overnight on the low setting. Makes 8 to 10 main-course servings.

Stuffed Green Peppers (microwave)
Yield: 4 Servings

4 medium green peppers, washed
1 lb lean ground beef
1/2 cup quick-cooking rice, uncooked
1 tsp salt
1/4 tsp pepper
1/2 tsp dried oregano leaves
1/8 tsp garlic powder
1/3 cup water, milk or tomato juice
1 egg slightly beaten
8 oz tomato sauce with onion bits

Cut green pepper in half lengthwise; remove core and seeds. Place peppers, hollow-side-up, in a shallow, heat-resistant, non-metallic baking dish. In a medium-sized bowl, crumble beef. Add rice, salt, pepper, oregano, garlic powder, water, egg and 1/2 cup of tomato sauce. Mix until thoroughly combined. Spoon mixture into pepper halves. Spoon remaining tomato sauce over peppers. Heat, covered loosely with wax paper, 14 minutes in Microwave Oven or until meat is cooked and peppers are as tender as desired. Allow to stand 4 minutes, covered, before serving.

Stuffed Bell Peppers
Serves 6

6 lg. green peppers
1 lg. onion, chopped
2 ribs celery, diced
3 cloves garlic, minced
2 tbs. olive oil
1 1/2 lb. lean ground beef
1/3 c. tomato paste
1/2 lb. sharp cheddar cheese, in 1/2" cubes
1 (35-oz.) can whole tomatoes, drained and chopped
1/4 c. parsley, minced
2 tsp. oregano
3 tsp. basil
1/4 tsp. red pepper flakes
1 tsp. Worcestershire sauce

Halve peppers lengthwise; remove seeds and membranes. Blanch in boiling water 2 minutes; drain. Heat oven to 350 degrees Fahrenheit. In a large skillet, sauté onion, celery and garlic 5 minutes. Add beef and brown; stir in remaining ingredients. Fill peppers, place on oiled cookie sheet; bake 30 minutes.
