Stuffed Jalapeno Peppers

Jalapeno peppers
2 eggs, beaten
Cream cheese (or whatever kind you want)
Cornmeal and flour, equal portions

Rinse peppers. Don't remove stems, they will be the handles Make a slit lengthwise, in each pepper and remove seeds. Fill with cheese and close (don't overfill). Coat each pepper in egg, then in cornmeal-flour mixture, roll each pepper, holding by the stem. Fry until brown, turning so that they fry evenly. Or you can deep-fry them.

Stuffed Jalapeno Peppers

Makes: 12 servings, 2 stuffed pepper halves each

2 Tbsp. KRAFT Zesty Italian Dressing
1/2 lb. ground beef, cooked, drained
1/2 cup chopped tomato
2 Tbsp. PLANTERS Slivered Almonds
2 Tbsp. raisins
1 cup KRAFT Shredded Cheddar Cheese, divided
12 medium jalapeno peppers

PREHEAT oven to 350°F. Heat dressing in medium saucepan on medium-high heat. Add meat, tomatoes, almonds and raisins; cook 3 to 5 minutes or until heated through, stirring occasionally. Remove from heat; drain excess liquid. Stir in 1/4 cup of the cheese; set aside.

CUT each pepper in half lengthwise; remove and discard seeds. Place peppers on foil-covered baking sheet. Fill each with about 1 Tbsp. of the meat mixture.

BAKE 10 minutes; sprinkle with remaining 3/4-cup cheese. Bake an additional 3 to 5 minutes or until cheese is melted. Serve warm.

11 To 14 oz can pickle -jalapeno peppers, whole and drained
1 8 oz pkg. cream cheese -softened
2 Eggs, boiled
1/4ts Garlic salt
1tb Finely chopped onion
4tb Mayonnaise

Cut each jalapeno pepper in half lengthwise and remove veins and seeds. In
a small bowl blend the cream cheese, eggs, and mayonnaise. Stir in the onion and garlic salt to taste. Stuff peppers halves with cheese mixture. Chill before serving.
